Pumpkin Crumble Cake

Are you looking for an alternative to pumpkin pie this Thanksgiving? Why not try this simple and delicious recipe? Pumpkin Crumble Cake is a bit like cake and a bit like pie so you can have the best of both worlds!

Here’s what you will need:

• 1 (18.25 ounce) package yellow or white cake mix
• 1 egg, beaten
• 1/2 cup butter, melted
• 1 (15 ounce) can pumpkin
• 3 eggs, beaten
• 1/2 cup white sugar
• 1/4 cup packed brown sugar
• 1 1/2 teaspoons ground cinnamon
• ½ teaspoon ginger
• 1/2 cup white sugar
• 3 tablespoons butter, softened
• 1/2 cup chopped pecans (optional)

Oven 350 degrees * Prep Time 10 minutes * Baking Time 45 minutes*

First, you will want to preheat the oven to 350* Lightly grease a 9 x 13 pan.

Step One:

Separate one cup of cake mix and set aside. With the remaining mix, pour into a bowl and mix in 1 cup of sugar and ½ cup of melted butter. Mix well. This is the foundation of the cake. Press into the bottom of the 9x13 pan.

Step Two:

In a bowl, mix one 15oz can of pumpkin, 3 eggs, ½ cup white sugar, ¼ cup brown sugar and 1 ½ teaspoons of cinnamon and 1/2 teaspoon of ginger. Pour mixture over the crust.

Step Three:

Place remaining cake mixture into a small bowl along with ½ cup sugar and 3 tablespoons of softened butter. Mix and crumble over pumpkin mixture. If you would like, you can add chopped pecans to the top.

Place in the oven for 45 minutes and let sit for 1 hour before serving.
